Have you ever heard of Banoffee?? It’s typically an English pie made with bananas, toffee, cream and buttery biscuits😋 How about a little healthier version rolled into a ball!? Ummm yes please!! Give these Banoffee Truffles a try, bet you can’t just eat one (I couldn’t 😬)! Makes 10 balls.

1 Medium Ripe Banana
1/3 Cup Salted Caramel Crunch Flavored Powder
1/3 Cup Oats Ground Into Powder
6 Vanilla Cream Cookes (Separate and remove cream)
6 Mini Caramel Rice Cakes
1/4 Cup Caramel Chips
1 Tablespoon Banana Nut Flavored Powder
Blend all dry ingredients (except Peanut Powder) in a food processor into a fine flour.
In a medium bowl mash banana and add all dry ingredients including Salted Caramel PB powder and mix until forming a thick dough.
If dough is too wet, add a little more oat flour.
Spoon out about Tbsp portions and roll into balls and then place into freezer.
Optional toppings: In a small microwave bowl melt caramel chips with 1 tsp coconut oil in 20 sec increments, stirring, until smooth.
Remove Truffles from freezer and top with melted caramel chips and sprinkle with @flavoredpbcobanana nut bread powder.
Other option place 1 Tbsp banana nut bread Pb powder onto a plate or bowl and roll balls into powder to coat.
Place back in the fridge or freezer to firm.
