CHOCOLATE COCONUT AIR FRYER DONUTS

Ingredients:
- 2 Tbsp Flavored PB Co Cocoa-Nut Donut or Chocolate Almond Bar PB Powder.
- 2 Tbsp GF All Purpose Flour.
- 1 Tbsp Coconut Flour.
- 1 Tbsp Unsweetened Cocoa Powder
- 1/4 teaspoon Baking Powder.
- 2 Packets Truvia or sweetener of choice.
- Pinch of sea salt (optional).
- 1 medium or large whole egg.
- 2 tbsp Ready Made Jell-O Sugar Free Chocolate Pudding. (Can Use Greek yogurt, or non-dairy yogurt or pudding)
Preparation:
- In a medium bowl, mix all dry ingredients until fully incorporated.
- Add egg and Pudding, and stir to form a thick dough. If too wet to pick up and roll, add more flour.
- It helps to spray hands with cooking oil
- Separate dough into 2 servings.
- Roll dough into a rope that you can connect and create donut shape.
- Line Air Fryer with cooking sprayed foil.
- Place donuts in foil and spray top of donuts with butter spray, coconut oil,bor brush with egg white. Then sprinkle with granulated sweetener and dusting of cocoa if desired.
- Set Fryer to 320 degrees for 10-12 mins.
- Flip donuts over halfway through cooking.
- Be sure not to overcook. Should be crispy on top but soft inside.
- For topping, you can use remaining sugar-free pudding, or whatever your macros allow.
- Sprinkle with coconut flakes.
