Got a craving for cake and no desire to bake? I made this cake in a skillet originally and baked it, which totally worked, but not everyone has a mini skillet and I had to use twice the ingredients, so I simplified it a bit, and it’s just as delicious and easier!

1 Canned pineapple ring (water or juice packed)
1 maraschino cherrie (optional)
2 teaspoons Sugar Free Caramel Sauce
1/4 c Flavored PB Co salted caramel crunch
1 tbsp coconut flour
1/4 teaspoon baking powder.
1-2 packs truvia or sweetener of choice to taste
Dash of cinnamon
Pinch of sea salt
1 large or XL whole egg (can sub liquid egg whites, 5+ teaspoons)
In bottom of a ramekin, small mug or bowl Pour sugar-free caramel sauce
Place 1 pineapple ring and then cherry in center of ring in bottom of vessel on top of caramel
In a separate bowl add all dry ingredients stir to incorporate them
Add whole egg and mix until smooth, should create a muffin/thick pudding-like batter (if too thick add a little water to thin, if too thin add little flour to thicken)
Pour batter over pineapple/caramel in cooking vessel
Microwave for 45 secs- 1 min (cook times will vary so just keep an eye, should rise immediately and once done should spring back to touch, don’t overcook or it can get dry)
Let cool slightly, run a knife around cake to loosen, flip over onto plate!! Can top with additional Flavored PB Co salted caramel crunch or sugar-free caramel if desired😋
